Banana Cake


  1⁄4 teaspoon salt

1 1⁄2 teaspoons Organic Stevia Extract Powder

4 1⁄4 teaspoons baking powder

3 eggs, separated, at room temperature

6 tablespoons vegetable oil

2 1⁄2 teaspoons vanilla extract

1 cup mashed ripe banana (about 2 bananas)

Frosting of your choice

1⁄2 cup chopped walnuts


 In a bowl sift together the dry ingredients. Beat egg whites until stiff. Set aside. Stir together egg yolks, milk, vegetable oil, vanilla extract and banana. Add the dry ingredients and beat to combine. Fold in beaten egg whites. Turn into 2 (8 inch diameter) oiled and  floured cake pans. Bake in a pre-heated 350 degree oven for 25 – 30 minutes or until cake tests done. Cool cake 10 minutes in pans. Turn out onto cooling racks. Add frosting of your choice, then press walnuts into frosting.


Variations: Salt may be omitted.

Makes 2 (8 inch ) layers
