1/8 tsp Organic Stevia powdered extract
1 teaspoon ground mustard
1/3 cup wine vinegar
1 cup olive oil
1/3 cup pure, unsweetened, blueberry juice
In a small mixing bowl, combine stevia and mustard. Add vinegar; mix well. Gradually add oil while beating on medium speed. Add juice. Beat for about 5 minutes. Cover and refrigerate. Serve over baby greens. Refrigerate leftovers. Yield: 1 2/3 cups.
